VEGG WHITE is a professional vegan alternative to egg white, used in Sour and Fizz cocktails to create a dense, fine and visually appealing foam.
Unlike traditional egg white, it offers a safer and more stable solution: no risk of contamination, no egg smell and no texture inconsistencies. It is designed for consistency and efficiency in bars, while also delivering clean, aesthetic results at home, without complicated techniques.
What does it bring to the glass?
- Texture: velvety and fine, delivering that premium sensation with every sip.
- Stability: a foam crown that holds its shape for up to 2 hours, ideal for events, pre-batching or terraces.
- Purity: does not add flavour or weigh down the drink, a neutral profile.
- Vibe: precise, modern and visually flawless.
How to use it
- Sours: Whiskey Sour, Amaretto Sour, Pisco Sour.
- Fizzes: Gin Fizz and other classic Fizzes.
- Bar techniques: espuma for cocktails and plating, edible air and any creation where you need volume, finesse and an impeccable look.
- Simple usage recommendation: use it in the same proportion you would use egg white in a classic recipe, and shake hard to achieve maximum texture and stability.
Why you'll love it (Nego's Verdict)
- 100% vegan and safe: no animal-derived ingredients, a modern alternative that excludes no customer.
- No egg smell: your cocktail keeps its aromas clean and well defined.
- No coagulation: stable and predictable behaviour during service.
- Record stability: the foam does not collapse after 5 minutes.
- Speed in service: ready to pour, with no need to crack and separate eggs for every order.
- Versatility: from classic Sours to advanced molecular mixology techniques.
- Shelf-life: 12 months sealed, 30 days after opening.
